1/2      pound fillet of sole
2         tablespoons parsley chopped
1/4      cup water
1         tbsp margarine or butter
1         tbsp flour
1/2      cup milk
1/4      cup cheddar cheese shredded
1/2      tsp salt
1/2      cup rice cooked

Preheat oven to 425 degrees. Place the fillet of sole in a greased baking dish and cover with the parsley. Cover the bottom of the dish with a small amount of water. Cook for about 12 minutes. Watch to make sure it doesn't burn. Shred the sole with a fork. Melt the butter or margarine in a pan and stir in the flour and milk. Cook until it thickens. Remove from the heat and add the cheese and salt while stirring. Add the fish and rice and stir well. It should be fairly thick once cooled. It is ready to be served or stored in an airtight container in the refrigerator. A great gourmet cat treat and an excellent cat food recipe.
